New York Strip Steaks with Cherry Pepper and Pomodoro Sauce
Servings: 2
Ingredients:
2 New York strip steaks (12 oz each)
1/4 cup extra virgin olive oil
1/2 cup slivered garlic
1 cup minced red onion
1 cup white wine
1/2 cup cherry juice
1 tbsp Italian herbs
1 cup chopped parsley
1 cup sliced cherry peppers
1 jar red pomodoro tomato sauce
Pinch of flake salt
Parsley (for garnish)
Instructions:
Season Steaks:
Season the New York strip steaks with flake salt and a touch of olive oil.
Sear Steaks:
Heat a cast iron pan over high heat.
Sear the steaks for 5 minutes on each side.
Remove the steaks from the pan and set aside.
Prepare Sauce Base:
In the same pan, add the slivered garlic and minced red onion.
Sauté until translucent.
Add Remaining Ingredients:
Add the sliced cherry peppers, Italian herbs, and chopped parsley to the pan.
Deglaze with white wine and cherry juice, stirring to combine.
Incorporate Pomodoro Sauce:
Add the jar of red pomodoro tomato sauce to the pan.
Place the seared steaks back into the pan.
Simmer:
Simmer for 15 minutes until the steaks reach the desired temperature.
Rest and Slice Steaks:
Remove the steaks from the pan and let them rest while the sauce continues to simmer.
Slice the steaks.
Serve:
Ladle the sauce over the sliced steaks.
Garnish with fresh parsley.
